হালিমের মাংসের উপকরণ: হাড়সহ গরুর মাংস ১ কেজি, এলাচ ৪টি, রসুন বাটা ২ চা-চামচ, লবণ ১ টেবিল-চামচ, হলুদ গুঁড়া ১ চা-চামচ, টক দই আধা কাপ, দারচিনি ৪ টুকরা, আদা বাটা ২ টেবিল-চামচ, গোলমরিচ গুঁড়া ১ চা-চামচ, জিরা বাটা ২ চা-চামচ,
সয়াবিন তেল ১ কাপ, তেজপাতা ২টি, পেঁয়াজ কুচি ১ কাপ, লবঙ্গ ৪টি, ধনে বাটা ২ টেবিল-চামচ, চিনি আধা চা-চামচ, মরিচ গুঁড়া ১ টেবিল-চামচ।

প্রণালি: মাংস হাড়সহ ছোট ছোট টুকরা করে সব উপকরণ দিয়ে মাখিয়ে কিছুক্ষণ রাখতে হবে।
৪ কাপ বা পরিমাণমতো পানি দিয়ে সেদ্ধ করে মাংস কষিয়ে নিতে হবে।

হালিমের উপকরণ: মুগডাল ভাজা আধা কাপ, পোলাওয়ের চাল ১/৪ কাপ, মসুর ডাল আধা কাপ, পেঁয়াজ কুচি ২ টেবিল-চামচ, গম আধা ভাঙা ১/২ কাপ, তেজপাতা ২টি, রসুন কুচি ১ টেবিল-চামচ, মটর ডাল আধা কাপ, কাঁচা মরিচ ৭-৮টি, আদা কুচি ১ টেবিল চামচ, মাষকলাইয়ের ডাল ভাজা আধা কাপ, লবণ পরিমাণমতো, ছোলার ডাল পৌনে কাপ, হলুদ গুঁড়া ১ চা-চামচ, পুদিনাপাতা কুচি আধা কাপ, ধনেপাতা কুচি আধা কাপ।

প্রণালি: গম ৫-৬ ঘণ্টা ভিজিয়ে রেখে চাল-ডাল ধুয়ে সব উপকরণ একসঙ্গে পরিমাণমতো পানি দিয়ে সেদ্ধ করতে হবে। গম-ডাল ভালোভাবে সেদ্ধ হলে ঘুটে নিতে হবে। মাংস ঢেলে দিয়ে মৃদু আঁচে রান্না করতে হবে। পরিবেশনের সময় আদা কুচি, পেঁয়াজ বেরেস্তা, হালিমের মসলা (রেসিপি নিম্নে), লেমন রাইন্ড, লেবুর রস, কাঁচা মরিচ কুচি, পুদিনাপাতা কুচি ও ধনেপাতা কুচি দিয়ে পরিবেশন করতে হবে।

হালিমের মসলার তৈরি- ধনে গুঁড়া ৪ টেবিল-চামচ, গোলমরিচ গুঁড়া ১ টেবিল-চামচ, দারচিনি ১ চা-চামচ, কালজিরা গুঁড়া হাফ চা-চামচ, মেথি ১ চা-চামচ, লবঙ্গ গুঁড়া ১ টেবিল-চামচ, মৌরি ১ টেবিল-চামচ, শুকনা মরিচ ১২-১৪টি, সরিষা ১ টেবিল-চামচ, জিরা ২ টেবিল-চামচ, এলাচ ৬টি, রাঁধুনি ১ চা-চামচ।

প্রণালি: সব মসলা আলাদা গুঁড়া করে একসঙ্গে মিশিয়ে রাখতে হবে।

সঞ্জীব কাপুরের জাফরানী বাদাম কুলফি

Ingredients

• দুধ ৩ লিটার
Milk 3 liters

•চিনি আধ কাপ
Sugar 1/2 cup

•কয়েকটা জাফরান
Saffron (kesar) a few strands

•টেলে নেয়া আমন্ড ২০ টা
Almonds,toasted 20

•সবুজ দারুচিনি গুড়া ১ চিমটি(আমার মতে না পেলে নরমাল টা ব্যবহার করলেও কাজ চলবে )
Green cardamom powder a pinch

Method

1.সস্প্যানে দুধ গরম করে জ্বাল দিন।
Heat milk in a saucepan and bring it to boil.

2.দুধটাকে ১ লিটার/৫ কাপ করে নিতে হবে।এ কাজটা করার সময় অনবরত নাড়তে হবে।
Simmer and reduce to one liter (five cups),
stirring constantly.

3.চিনি দিয়ে ভালো করে নেড়ে মশিয়ে নিন।
Add sugar and stir till it dissolves.

4.১টেবিল চামচ গরম দুধে জাফরান টা ভিজিয়ে নিন।এরপর ঘন দুধে ঢেলে দিন।
Soak saffron in a tablespoon of warm milk and add it to the reduced milk.

5.টালা আমন্ড চপ করে নিন ও দুধে ঢেলে দিন।
Chop the toasted almonds and add it to the milk.

6.এলাচ গুড়া দিয়ে মিশান।
Add the cardamom powder and mix.

7.আইস্ ক্রী্মের মোল্ডে ঢেলে ,ঢাকনা দিয়ে রেফ্রিজারেটরে জমান।
Pour in the prepared moulds, seal them airtight and freeze them in the refrigerator.

সঞ্জীব কাপুরের টিপসঃ
খুব তাড়াতাড়ি এই কুলফি বানাতে চাইলে ১.৫ লিটার দুধকে ১ লিটার করে এতে ৪০০ গ্রাম কন্ডেন্সড মিল্ক মিশিয়ে বাকি প্রনালী অনুসরন করুন।

Chef's Tip
To make the kulfi in the minimum time: take one and a half liters of milk and reduce it to one liter and add 400 grams of condensed milk and proceed in the same way

এখন শীতের বাজার সবজিতে ভরপুর। এসব সবজির কয়েকটি গুণাগুণ তুলে ধরা হল।

টমেটো : যারা সপ্তাহে অন্তত ৪ বার টমেটো খায় তাদের প্রোস্টেট ক্যান্সারসহ মূত্রথলি, অগ্ন্যাশয় ও খাদ্যনালীর ক্যান্সারের ঝুঁকি ২০ ভাগ কমে যায়। আর সপ্তাহে ১০ বার খেলে ঝুঁকি ৫০ ভাগ কমে আসে। তবে এ উপকার পেতে হলে তারা পাকা টমেটো এবং রান্না করা কিংবা সস করা টমেটো খেতে হয়।

ফুলকপি ও মটরশুঁটি : হাড়ের গঠন, মাংসপেশির সঙ্কোচনজনিত ব্যথা দূরীকরণে আর রক্ত তৈরির সাহায্য করে।

গাজর : গাজর ত্বক ও চুলকে সূর্যরশ্মির ক্ষতিকর প্রভাব থেকে রক্ষা করে। গাজর মহিলাদের ছত্রাক সংক্রমণের ঝুঁকি কমায়। চোখের ছানি, রাতকানা, হৃদরোগসহ ক্যান্সার প্রতিরোধে গাজর অগ্রণী ভূমিকা পালন করে।

সিম ও ঢেঁড়স : সিম ও ঢেঁড়সের মধ্যে অন্যান্য সবজির মতো পুষ্টি ও উপাদান এবং ভিটামিন রয়েছে। তবে সিম ও ঢেঁড়সে রয়েছে প্রচুর ক্যালসিয়াম।

ধনিয়া ও লেটুস : এই দুটি পাতাই সহজে কাঁচা অবস্থায় খাওয়া যায়। ফলে প্রকৃত পুষ্টিগুণ প্রায় পুরোটাই এ ক্ষেত্রে বজায় থাকে।

অনান্য সবজি ও শাকপাতা: ভিটামিন- এ লিভারে ছয়মাস পর্যন্ত সঞ্চিত থাকে বলে শীতের সময় নিয়মিত শাকসবজি খেলে তা বছরের বাকি সময়ের ভিটামিন- এর চাহিদা পূরণে সক্ষম হতে পারে। এতে থাকে প্রচুর পরিমাণ এন্টি অক্সিডেন্ট উপাদান, যা ত্বকের বার্ধক্যরোধে ভূমিকা রাখে। এছাড়া হৃদরোগ প্রতিরোধে সহায়ক। খাদ্যনালীর ক্যান্সারসহ বিভিন্ন ক্যান্সার প্রতিরোধে কার্যকর ভূমিকা পালন করে। দেহ মুটিয়ে যাওয়ার থেকে রক্ষা পায় এবং যৌবন শক্তি অটুট রাখতে সাহায্য করে।

Retailers pledge to continue business with Bangladesh suppliers

Work orders are flowing in from international garment retailers as steady economic activities are being restored after several spells of political violence, industry insiders said yesterday. “Retailers are now placing a lot of orders. The situation is good now. I urge the government to maintain this stable situation to get more orders,” Atiqul Islam, president of Bangladesh Garment Manufacturers and Exporters Association, told The Daily Star.

As a prerequisite to continued work orders, retailers demanded a stable political scene, at a meeting with Commerce Minister Tofail Ahmed, leaders of BGMEA and other stakeholders at Westin Dhaka yesterday. “Another reason for holding the meeting was to convey a message to retailers that Bangladesh is back in business after the political upheaval,” Islam added. Buyers are regaining confidence after the general elections on January 5 and they have a long-term business plan in Bangladesh, an official of Inditex, a Spanish clothing retail giant, said asking not to be named. “We want a stable political situation.” “There was a ban on travelling to Bangladesh on our company officials in Spain. The ban has been withdrawn by our headquarters last month.” “A good number of high-ups of the company are scheduled to visit Bangladesh next month with a lot of work orders. If a stable economic situation prevails, we will not face any major crisis and Bangladesh will remain a lucrative destination for price competitiveness,” the official said.

Retailers had faced uncertainty with their orders in the face of unrest when the country witnessed hartals and blockades for 74 days in 2013 and 11 days in January and February. Garment makers could not transport goods to Chittagong Port from their factories due to a volatile political situation across the country. As a result, international retailers cut their travel plans to Bangladesh and in some cases, called the garment makers to their headquarters in Europe and the US for business meetings. The commerce minister urged retailers to increase the prices of garment items as workers' wages was increased 77 percent from December last year. The minister suggested the garment manufacturers implement the agreements inked with the Accord on Fire and Building Safety in Bangladesh and North American Alliance for improving safety standards and workers' rights in the factories. “You will have to work to overcome the image crisis created from the volatile political situation. Bangladesh is back in business now after the elections.”

Medicine manufacturers' direct market penetration has reduced the size of wholesale medicine business by 75 per cent over the last decade, circles concerned have claimed. "Many wholesale medicine shops have shut down their business for want of customers -- retail drug stores -- as the latter are getting direct delivery of medicines from the manufacturers," they said. The main divisional markets of Mitford in Dhaka, Hajari Lane in Chittagong, Heraj Market in Khulna and other medium and small wholesale centres in different districts are on the verge of closure due to insufficient number of customers. They said frequent fixation of medicine prices by the manufacturers and insufficient number of customers have reduced their business by about 75 per cent. Retail level druggists said despite direct penetration by the manufacturers, the wholesale system needs to be there for availability of medicines across the country. Many companies do not have adequate manpower and logistics to market their products all over the country.

 Large manufacturers have resorted to direct marketing to increase their market share, to avoid counterfeiting and reap the maximum profit. A leader in the drugs manufacturers' association office said competition to have more market share and conscious effort to avoid counterfeiting of their products have led the companies to skip marketing of their products through wholesalers. He said some dishonest pharmaceutical companies manufacture fake drugs of leading companies and sell them to the customers through wholesale channels. He said when the end level users take those counterfeit medicines, they get cheated as the medicines do not work. A Bangladesh Association of Pharmaceuticals Industries (BAPI) office bearer said foils and blisters of leading companies' products are being copied by some of their corrupt counterparts and they market the sub-standard products to the end-level users in different parts of the country. Bangladesh Chemists and Druggist Association Vice President Abdul Hai said, "Our wholesale business is shrinking day by day." Currently two thousand wholesale medicine outlets are there in the Mitford area and their sales volume has dropped by about 70 per cent in the last ten years. He said many wholesale outlets do not get enough customers and some have been forced to shut their business. They also do not have enough money to purchase drugs as prices of most medicines have double over the last few years. Mr. Hai said, to ensure sound supply of medicines the wholesale system should be kept active as still except a few leading ones most companies cannot reach each and every place of the country. "We are against the counterfeiting of drugs by using the wholesale channels," he added.

Inflation edged up 15 basis points to 7.5 percent in January on the back of a non-food price hike, making it harder for the central bank to curb price pressures. The figure comes less than two weeks after the central bank admitted it would face challenges in bringing down inflation to the desired 7 percent in the second half of the fiscal year. The concerns over inflation prompted the regulator to keep the policy rates unchanged. Food inflation went down 19 basis points last month to 8.81 percent, while non-food inflation increased 65 basis points to 5.53 percent, according to data from the Bangladesh Bureau of Statistics.

The price hike in non-food items is responsible for the latest rise in inflation, reversing the recent trend, BBS Director General Golam Mostafa Kamal told reporters at his office in Dhaka yesterday. Hassan Zaman, chief economist of Bangladesh Bank, said non-food inflation rose due to resumption of normal economic activity and wage increases in the manufacturing sector. "We had anticipated this in our last monetary policy statement, which is why we didn't lower our policy rates," he added. Zahid Hussain, lead economist of the World Bank in Dhaka, said the rise in inflation in January was expected and was driven entirely by an increase in non-food inflation in both rural and urban areas.  "The increase in non-food inflation in turn reflects cost push resulting from the disruptions in supply caused by prolonged period of shutdowns and blockades in the last quarter of 2013." He said the rise in non-food inflation might not last if political stability is sustained, since the demand is weak, monetary conditions are restrained and the exchange rate is stable. Kamal, however, said the stable political scenario always has a positive impact on the economy. "The availability of food items, which had to be stored at warehouses due to the unrest, has increased. Besides, farmers have also sold their stored crops and are now preparing to cultivate new rice. These have led to the fall of food inflation." He attributed the rise in non-food inflation onto the hike in house rents in the first month of the year.

Meanwhile, BB said it would continue to focus on achieving its inflation targets while providing sufficient space in its monetary programme for lending to activities. The BB's monetary policy statement for January-June urged the government to keep its bank borrowing for fiscal 2013-14 within the target of Tk 26,000 crore. "Limiting the government borrowing from the banking sector is important for achieving inflation targets and providing space for banks to lend to the private sector," said the central bank. The fiscal coordination council of the finance ministry is due to sit today with Finance Minister AMA Muhith in chair to finalise the revised budget. The government's bank borrowing target will remain within the budgetary target though, a finance ministry official said.
