Lamb Leg Roast


For Marinating:
1 cup Yogurt
3 tbl spn Ginger paste
3 tbl spn Garlic paste
½ cup grated papaya (raw/ cooking papaya)
1 tbl spn Coriander powder
1tbl spn Garam masala powder
1 tbl spn Cinnamon powder
1 tea spn Cardamom powder
Add some Salt
Some Oil
Marinate for at least 12 hrs.
Process:
Boil the whole leg in water in medium gas temperature until the meat is complete cooked. Try not to keep any water left after cooking the leg. I think it will take not more than 1 ½ hrs to cook.
Now after the lamb leg is done, marinate again with:
½ cup Yogurt (you can add sweet Yogurt if you like)
2tbl spn Ginger paste and 2 tbl spn Garlic paste
1 tea spn Garam masla powder
1 tea spn Jeera powder
Some Chili powder according to your taste
½ cup Tomato Ketchup
little bit of Lime juice
Add Oil if required
Salt if needed
Marinate for 2-3 hrs
Then bake in 160 degree C in oven for 30-40 minutes, covering the lamb leg with silver foil.
After baking fry the whole leg in pan with some chopped onions and oil + Ghee for 5 minutes. Now garnish with Fried Onions/ Beresta, Green Chili’s, Coriander leaf, Prunes, Raisins and Nuts.
