Tomato Cheese Soup

Ingredients:
1    medium onion, chopped
45 ml / 3 tbsp    olive oil
500 ml / 2 cups    peeled, seeded and chopped tomatoes
500 ml / 2 cups    chicken stock
75 ml / 1/3 cup    35% cream
375 ml / 1 1/2 cups    grated goat cheese
To taste    freshly ground pepper
15 ml / 1 tbsp    chopped chives

Directions:
In a saucepan, wilt the onion in the oil.

Add the tomatoes and stock, bring to a boil, reduce the heat to low and simmer 10 minutes

Add the cream, cheese and pepper. Stir well to melt the cheese.



Serve drizzled with oil and garnished with chopped chives.
