Refractive index is a measure of the light retarding property of a medium equal to the ratio of the velocity of the light in vacuum to that in the medium. The refractive power of fats or oils varies somewhat widely and governed chiefly by the degree of unsaturation present therein. It is thus characteristic for various classes of fats and is much used in butter analysis. In our investigation, the refractive index of the muscle lipid of Sperata aor (Ayre fish) was found to be 1.4642 at 30ÂșC . indicating the muscle lipid from this specimen contained lower amounts of unsaturated fatty acids.
